Beer At The Fountain is a weekly series that showcases some of our favorite craft beers, past, present, and future. Most, if not all, of the beers covered will be available at the Chicago Ale Fest.
The Chicago Ale Fest is a celebration of American Craft Beer at Buckingham Fountain. Whether you’re a craft beer aficionado or new to craft beer, the Chicago Ale Fest has something for everyone.
Brewery: Finch Beer Company
Beer: Hardcore Chimera IPA
Style: American Double IPA
For a beer that walks the line between hoppy American Pale and and an IPA, Finch’s Chimera brings a flavorful combination of citrus and pine notes. While notes of grapefruit and candied orange pack a powerful punch, this beer is well-balanced with a hearty, sweet caramel and bready flavors from its hearty malt bill. It’s crisp without being thin, holding a body similar to many wheat beers. With an off-white head, ample lacing and moderate carbonation, it’s deceptively drinkable at 6% ABV.
A fluffy pour, Chimera leaves a good trail of lacing as you empty your glass. Subtle and short-lived aromas of grapefruit are most prevalent, while first sip brings the typical hoppyness you expect from an IPA. Bold, but not biting notes of citrus are followed by sweet biscuity flavors and a dry, bitter finish for a drinkable, malty IPA. With so many “hop bombs” available, Finch’s Chimera strikes a more balanced approach to the IPA style.
